Fruit salsas are a cross between a condiment and a fruit salad. They are quick to make and are a wonderful complement to savory dishes like broiled fish. This sweet-tart salsa goes especially well with smoked foods.
Try to make it as close to serving time as possible, since the enzymes in the pineapple and kiwifruit will turn the other ingredients mushy if they sit too long.
- 2 cups finely diced fresh pineapple
- 2 kiwifruit, peeled and finely diced
- ½ cup finely diced jícama or tart, crisp apple
- 2 tablespoons honey *
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice
In a large bowl, stir together the pineapple, kiwifruit, jícama, honey, cilantro, and lime juice. Refrigerate for up to 2 hours.
